Courgettes Whole Wheat Pasta

A nice and easy pasta, rich of nutrients but still light! Great for the lunch break!

  • 320 g Courgettes
  • 1 tsp Extra Virgin Olive Oil
  • 90 g Whole Wheat Pasta (Fusilli for me)
  • half small onion
  • half carrot
  • a bit celery
  • half vegetable stock cube (Optional)


  • Chop the celery, onion and carrot into small cubes.
  • Warm the oil in a pan and stir fry them for few minutes, until they are cooked through.
  • Chop the courgettes in small bits and add to the rest to cook. If necessary add half glass of water. Add also the vegetable stock cube. Cook for 10 minutes with a lid, so the courgettes get tender.
  • In a different pot boil the pasta, as you would normally do (I normally add salt in the water) and let it cook as much as says in the pack (normally is about 10 minutes).
  • Drain the pasta and add to it the courgettes sauces, mix well and serve!
