Pasta Pancetta and Radicchio

One of my favourites vegetables is Radicchio, a really nice and tasty italian vegetable, really good in pasta and risotto. Thankfully supermarkets such as tesco, ocado and waitrose have introduced it in UK, so I can still cook with it! It is an healthy choice to use with your pasta, and pancetta is really good to give that extra kick to it! Enjoy!

Ingredients

  • 1 medium Brown Onion
  • 1 Radicchio
  • 65 g Italian Pancetta (If you want can also be smoked)
  • 1 tablespoon Extra Virgin Olive Oil

Instructions

  • Chop the brown onion and stir fry it with the oil until gold.
  • Add the bacon and let it cook for 2 minutes.
  • Chop also the radicchio, in 1 cm slides. Wash it and add it to the pan. Leave it to cook for 10 minutes, so all the radicchio is cooked through.

  • Meanwhile, cook your pasta on the side, checking the cooking time to make it al dente! 
  • Add the pasta to the radicchio mix and mix it throughly. Enjoy!
