  • 3 Medium Eggs
  • 300 g Plain flour


  • Add the ingredients all together in a bowl and mix (with a mixer) or make a dough out of it with your hands. With a mixer it will take about 5 minutes, at the slowest settings with the hands depends on strong you are! The result should be a smooth dough like the one in the picture.
  • Put some cling film around it and let it rest 30 minutes in the fridge. This step cannot be missed, as without it the pasta is not going to get its elasticity.
  • Once the dough is ready, you can make any shape you like out of it. I have chosen tagliatelle, my favourite shape of homemade pasta!. To make tagliatelle, I have used firstly am handmade pasta roller (automatic) and used the tool lasagna sheet with a measure of 7. Once that was good enough I used the tagliatelle cutter. Fast and so taseful with my wildboard sauce!
