Ingredients

  • 550 g Plain Flou
  • 120 g Plain Water
  • 80 g Grappa or Vodka or Water
  • 1/2 tsp Salt

Instructions

  • Leave the butter outside the fridge for at least 2 hours.
  • In a mixer add the flour to the water and the liquor (you can have it only with water if you want or maybe vodka?!), and half teaspoon of salt. Mix all the ingredients and knead the dough for at least 5 minutes, until looks smooth outside. Put it for half hour in the fridge.
  • Put the butter between 2 pieces (or 1 big) of cling film and make a layer out of it (1 to 2 cm thick).

The folds – have a look to the video, it looks easier than is sounds!

  • Roll the pastry and make a thin layer out of it, longer and wider than the butter layer. Fold the butter inside the pastry. Roll it and fold it in 3 parts. Let it rest half hour in the fridge. This is your first fold.
  • Take it out the dough from the fridge and roll it thinner with the rolling pin. Fold it in 4. Put it back in the fridge for 30 minutes more. This is your second fold.
  • Roll the dough with a rolling pin and fold again in 3 (like the first fold). This is your third fold.
    You can do as many folds as you like, but 3 would be enough to make nice layers when you bake it.
  • Fill with whatever you like and bake in the oven for 20 minutes!
